  • 1/2 c. plus 2 tablespoons salted butter, cubed and divided, at room temperature
  • 4 tart green apples (about 2 lbs.), peeled and cut into 1/2-inch pieces
  • 2 c. frozen raspberries
  • 1/3 c. granulated sugar
  • 2 tsp. cornstarch 
  • 2 tsp. vanilla extract
  • 1/2 tsp. kosher salt, divided
  • 3/4 c. all-purpose flour
  • 1 c. old-fashioned oats
  • 1/2 c. chopped roasted and salted pistachios
  • 1/3 c. packed light brown sugar
  • 1 tsp. ground cinnamon
  • Vanilla ice cream, for serving


  1. Preheat the oven to 350°F. Line a rimmed baking sheet with foil. Melt 2 tablespoons of butter in a 9- or 10-inch cast-iron skillet over medium heat. Take the skillet off the heat. Combine the apples, raspberries, granulated sugar, cornflour, vanilla, and ¼ teaspoon of salt in a large bowl. Scrape the mixture of apples and juices into the skillet and spread it into an even layer.
  2. Scoop the mixture into clumps and sprinkle it over the apples in the skillet. In the same bowl, mix the flour, oats, pistachios, brown sugar, cinnamon, and the last ¼ teaspoon of salt. Add the remaining 1/2 cup of butter and mash with your fingers until the butter is incorporated and crumbs form.
  3. After putting the skillet on the prepared baking sheet, bake for 40 to 50 minutes, or until the crisp is bubbling and golden. If the top is turning too brown, cover loosely with foil for the last 15 minutes of baking. Let it cool for about 10 minutes before serving it with ice cream.
