Developed for National Grilled Cheese Sandwich Day (April 12), this is the best grilled cheese you have ever had! If you use garlic butter, hot or mild giardiniera, spinach, tomatoes, and four different Italian cheeses, you will have a grilled cheese sandwich that you decide to rethink! sandwich and cook until browned and the cheese has melted, 5 to 10 minutes.

Ingredients

  • 2 tablespoons salted butter, softened
  • 1 teaspoon minced garlic
  • 2 thick slices of Italian bread
  • 1 ½ tablespoons olive oil, divided, or more as needed
  • 2 cups chopped fresh spinach
  • ½ cup giardiniera, drained
  • 2 slices mozzarella cheese
  • 2 slices provolone cheese
  • 2 slices Asiago cheese
  • 2 slices Fontina cheese
  • 3 slices Roma tomato, cut lengthwise, or more to taste

Directions

  • Step 1: In a small bowl, mix together the butter and garlic. Spread half of the butter on one side of each bread slice and set aside.
  • Step 2 In a large skillet over medium-low heat, heat 1 tablespoon of oil. Add the spinach and giardiniera; cook, stirring, until the spinach wilts, 3 to 5 minutes. Transfer to a bowl and wipe off the skillet.
  • Step 3 Warm the skillet and place one slice of bread, buttered side down. Heat the other side of the skillet with 1/2 tablespoon of oil. Add the mozzarella slices to the skillet and cook for 1 to 2 minutes, or until the slices are soft. Arrange the mozzarella slices on top of the bread in the skillet. Repeat with the provolone, Asiago, and Fontina slices.
  • Step 4 Place the spinach mixture on top of the cheese, then top with the tomatoes and the remaining slice of bread, buttered side up. Add more oil to the skillet if needed, and cook until heated through, 2 to 3 minutes. Flip the sandwich and continue cooking for an additional 5 to 10 minutes, or until the cheese is melted and browned.
